Out of the Deep Woods: Don't Forget the Turkey - Part 2

    In part 1, we went over our main dish of Indian spiced inspired turkey & as promised here are the recipes that I thought might be feasible to serve as side dishes. I am by no means knowledgeable about Indian culinary culture, so I am probably way off as far as authenticity, but I kinda knew that, as I changed quite a bit to fit my personal taste buds, so it is what it is folks.





Coconut Rice with Minted Peas

Ingredients:

2 cups jasmine rice
1 - 13.5 fl oz can coconut milk
1 -1/2 C of water
1 t salt, or to taste
2 T coconut sugar, or to taste
2 C frozen peas
1/4 t mint extract
1 T fresh mint, chopped for garnish
Chopped pistachios for garnish (optional - I forgot or I would have added it.)

Instructions:

In a rice cooker, add the coconut milk, water, salt, & sugar. Whisk til smooth. In a separate pot, rinse the jasmine rice several times until the water runs clear. Drain any excess water and add to the rice cooker. Set to cook.

Place peas in a microwave safe bowl. Add enough water to cover as well as the mint extract. Cook on high for 5 mins.

When rice cooker is done, fluff and place in a circle on plate. Place minted peas in center of rice. Top with the fresh mint & chopped pistachios.

Garam Masala & Bourbon Maple Roasted Rainbow Baby Carrots

Ingredients:


1 -10 oz bag of rainbow baby carrots

2 T Crown Bourbon Maple Syrup

1 tablespoon olive oil

1/2  t garlic powder

2 t of DIY garam masala spice mix - minus the cumin

salt & pepper to taste


Instructions:


Preheat the oven to 350° F and line a baking sheet with parchment paper. 


In a large bowl whisk together the bourbon maple syrup, oil, garlic powder, garam masala, salt and pepper. Toss the carrots in the mixture until they're coated then place them in a single layer on the prepared baking sheet. Pour any remaining glaze over top.


Roast the carrots for about 20 minutes or until they are tender, but not mushy. Rotate the baking sheet halfway through the cooking time.
