Maple Caramel Apple Crumble Cookies
I'm procrastinating a sewing project at the moment, & decided to do some baking. I dunno what it is about baking that does it for me, but I'm in my happy place when I do. I've been wanting to make these for some time, but it seems like so many things other things have taken priority or my health has prevented me.
I could have gone for an exact replica of the caramel apple he eats in the film (like in the photo above), but I'd rather eat a cookie than a caramel apple to be honest. LOL I decided to go with an oatmeal recipe base as they refer to the fall of civilization as "The Great Crumble" & seemed a perfect fit. I dunno about you, but I love me some apple crumble/dutch apple pie with caramel drizzled all over it!! YUM!!

After having tasted them, I can say they are most definitely "Better than syrup."
Maple Caramel Apple Crumble Cookies
- 1 Cup butter flavored Crisco or 2 sticks butter, softened
- 3/4 Cup firmly packed maple or brown sugar
- 1/2 Cup granulated sugar
- 2 Eggs
- 1 Teaspoon vanilla
- 1-1/2 Cups all-purpose flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 3 Cups quick or old fashioned oats, uncooked
- 1 Cup dehydrated diced apple pieces (I made my own with my food dehydrator)
- 1 - 10 oz package of Hershey's Sea Salt Caramel chips (get them here)
1. Heat oven to 350°F.
2. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
3. Add eggs and vanilla; beat well.
4. Add combined flour, baking soda, cinnamon and salt; mix well.
5. Add oats, apple pieces, & caramel chips; mix well.
6. Drop dough by rounded tablespoonfuls onto parchment paper lined cookie sheets. I used a small scoop to make mine as uniform as possible.
7. Bake 8 to 10 minutes or until light golden brown underneath.
8. Cool 1 minute on cookie sheets (if you try to remove them as soon as they come out of the oven, they will break apart.); remove to wire rack.
9. Cool completely. Store tightly covered.
I shared some with our dear neighbor & these are apparently "...the bomb!" LOL
