The Great Crumble




    The phrase Great Crumble is what is used in the series to describe the apocalypse, but it makes a great turn of phrase to describe the "cake" we're about to make. :-) 

     As you can see from the photo above, Gus is blowing out the candles for his 9th birthday. His "cake" looks like a fruit crumble made in a cast iron skillet. Having done research on the types of plants in Yellowstone, huckleberries seem the logical choice. Unfortunately, they are scarce & very expensive to ship the frozen ones I've seen, so I've opted for a substitute. Apparently huckleberries taste like a combination of blueberries & blackberries, so I used that combination to get the approximate taste.




The Great Crumble




Ingredients


Filling:

5 cups Berries (I used blackberries & blueberries)
3/4 cup sugar
3 Tbs corn starch
1/8 tsp salt
1/4 cup flour
1/2 tsp lemon juice
1 tsp pure vanilla extract


Crumble Topping:

1 cup rolled oats
1 cup flour
1/4 cup white sugar
3/4 cup light brown sugar
1 tsp ground cinnamon
1/8 tsp salt
2/3 cup melted butter

Instructions:


1. Preheat oven to 375 degrees
2. In a large bowl, add the berries as well as the rest of the filling ingredients, & toss gently to combine.
3. Add the melted butter to the topping ingredients & stir to incorporate.
4. Pour the berry mixture into a 8"x 8" dish/pan.
5. Spread the crumble mixture evenly over the filling.
6. Bake for 40-45 mins until the topping is golden brown & berries are bubbling around the edges.
7. Remove from oven & serve with a scoop of vanilla ice cream.
